Easter Egg Cookies

One of my favourite times of the year is S-P-R-I-N-G but more so when those Easter mini eggs arrive in all the stores! No joke, I had to put aside these chocolates aside so that I wouldn’t eat them all before I even baked the cookies!

Today, I’m sharing with you a little Easter inspired cookie recipe. Remember to purchase enough mini eggs to snack on the side!

For the Cookies:
  • 3½ cups all-purpose flour
  • 2 tsp baking powder
  • 1½  cup white sugar
  • ¾ cup brown sugar
  • 1 cup butter softened (not melted)
  • 3 eggs
  • 3 tsp vanilla extract
  • 1½ tsp salt
  • 1½ cup Cadbury mini eggs, cut into halves or crushed with a spoon

Instructions

1. Preheat oven to 350F
2. Cut mini eggs in half or place in ziplock bag and hit each egg with a spoon to break into smaller pieces.
3. Cream butter and sugar until light and fluffy.
4. Add the eggs one at a time; mixing each time you add an egg.
5. Add the vanilla extract.
6. Add all the dry and mix until almost completely mixed. Add in the mini eggs.
7. Line baking sheet with parchment paper and place rolled 1 inch balls of cookie or use a cookie scoop and place with enough space between the cookies as they will expand as they bake.
8. Bake for 10 minutes or until the edges are slightly browned.
9. Allow to cool + enjoy!
